Ingrediants: - 8 Lrg red potatoes (8 oz each)
- 1 Tbsp. chopped fresh parsley leaves
- 4 Tbsp. Chopped fresh rosemary
Instructions:
1. Preheat oven to 450 F. Carefully slice each potato thinly without cutting all the way through. Make a minimum 10 slices in order to give the accordion appearance.
2. Place potatoes on microwave-save dish and cover with waxed paper. Cook in microwave on High 12-15 minutes or until easily pierced with the tip of a knife.
3. Transfer potatoes to metal baking pan. Carefully drizzle oil between slices. Sprinkle and distribute evenly with 1/2 teaspoon salt, the Cajun Quickie Seasoning, Rosemary and black pepper. Roast in oven 25 minutes or until lightly browned. Transfer potatoes to platter and sprinkle with parsley.
